WORK EXPERIENCE

2010 to Date: Senior Technologist, Natural Resource Department, Egerton University

Duties and Responsibilities

  • Preparation, conducting and supervision of practical and theory classes.
  • Teaching food and bevarge knowledge, housekeeping operations, quantity food production, kitchen organization and food selection & preparation.
  • Participating in research and student projects.
  • Ensure that all scientific equipment are calibrated as per national and or international standards.
  • Supervise staff under my section.
  • Ensure all inventories are kept safe.
  • Ensure that health and safety standards are maintained in laboratories, workshops and fields.
  • Ensure service and maintainance of scientific equipment is done as per the operational instruction manuals.
  • Ensure that equipment spare parts and supply are available.
  • Ensure timely collection of school fee (bank slip) from Certificate students.
  • Organize timely teaching and attachment for Certificate students.
  • And any other duty due necessary by head of department

2006 - 2010: Senior Catering Manager, Catering Department, Egerton University

Duties and Responsibilities

  • Management of the catering operations, including breakfast, lunch and dinner services.
  • Efficient management of the teams, ensuring a high quality service.
  • Control and monitor the financial performance of the unit and to maintain costs within pre-budgeted targets.
  • Ensure all food is freshly cooked and prepared to a high standard as per service level agreement, Company policy and current legislation.
  • Implement and maintain the Statutory and Company standards of hygiene, health and safety and take any action as is necessary
  • Ensure adherence to the Quality Management Standards (QMS);
  • Perform any other duty as may be assigned by the Chief Catering manager from time to time.

1994 – 2006: Catering Officer, Catering Department, Egerton University

Duties and Responsibilities

  • Planning menus in consultation with head cook.
  • Ordering supplies.
  • Hiring, training and supervising casual staff and motivating permanent ones.
  • Organising staff rotas.
  • Ensuring that health and safety regulations are strictly observed, recorded and archived.
  • Monitoring the quality of the product and service provided.

1991 – 1994: Cateress/Housekeeper, Catering Department , Moi University

Duties and Responsibilities

  • Responsible for the overall smooth operations of hostels and catering services in the University;
  • Implement policy decision for the department in consultation with relevant offices;
  • Custodian of the students hostels records;
  • Advise the Catering and Hostels Manager on the staff training requirements;
  • Supervise and appraise staff accordingly;
  • Responsible for the direction, organization, administration of programmes in the department;
  • Advise the University Management as required on operational matters;
  • Prepare staff establishments for catering section in consultation with other catering officers in the University;
  • Monitor and evaluate the performance of the department;
  • Responsible for preparing the annual budget (estimates) for the department;
  • Ensure adherence to the Quality Management Standards (QMS);
  • Perform any other duty as may be assigned by the Supervisor from time to time.

1990 – 1991: Pastry Chef, Giriama Apartment and Beach Hotel

Duties and Responsibilities

  • Plan, implement and manage daily operations
  • Prepare menus
  • Suggest new menu items
  • Understand visitors' preferences and make suggestions based on findings
  • Prepare a wide variety of goods such as cakes, cookies, pies, bread 
  • Decorate pastries using different icings, toppings so that they are appealing to the eye
  • Monitor supplies and ingredients necessary for daily operations 
  • Check quality of material and condition of equipment 
  • Train, guide and motivate pastry assistants 
  • Identify staffing needs and help recruit and train personnel
  • Maintain a clean cooking station
  • Adhere to health and safety standards
  • Keep abreast with the latest food and industry trends

2011 to Date: Academic Advisor and Coordinator for Certificate in Ecotourism & Hospitality Management.
